Coconut and Raspberry Porridge

Since breakfast is the most important meal of the day, why not make it a little special and of course delicious. It is winter here in Australia and what better way to get through the dark cold days than with a warming bowl of nutrient packed porridge.

Oats are rich in B vitamins that nourish the nervous system and improve energy, while chia seeds are a great source of fibre and protein, together with beneficial omega 3 fats and calcium. Raspberries add a hit of vitamin C and antioxidants for glowing skin and banana is great source of potassium.

INGREDIENTS
  • 1 cup water
  • 1/3 cup oats (soak overnight in extra water to cut cooking time in the morning)
  • 4 tablespoons of coconut milk (or milk of choice)
  • 1 tablespoon of chia seeds
  • ½ banana
  • ¼ cup raspberries (fresh when in season, however frozen and organic taste great!)
  • Optional: Cinnamon, Cacao nibs, Goji berries, Ground Flaxseeds, Drizzle of raw honey or pure maple syrup
HOW TO MAKE IT
  1. Simply add the oats, water and coconut milk to a saucepan and cook until the oats are soft and creamy, and the liquid has absorbed.
  2. Pour into a bowl and top with fruit and a sprinkle of chia seeds.
  3. Add any additional toppings if you like.
