Tasty Home Made Festive Breakfast Granola

I love making homemade treats for loved ones, especially at Christmas time.

I made up little jars of festive granola last year and they were quite the hit! Set yourself a little time over the next couple of days to whip up this delicious mix, package into cute jars and you will have yourself one delightfully healthy Christmas gift.

INGREDIENTS
  • 2 cups of coconut flakes (read the ingredients and make sure it only contains COCONUT! You will be surprised)
  • 2 cups of oats
  • 2 cups raw nuts, roughly chopped (I like cashews, walnuts and almonds)
  • 2 tablespoons chia seeds
  • 1 teaspoon ground cinnamon
  • 3 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup (optional)
  • Add after baking: 1-2 cups of dried fruit ie. Cranberries, goji berries, apple, apricots, figs
HOW TO MAKE IT
  1. Preheat oven to 160C
  2. Mix all the dry ingredients in a bowl until all combined.
  3. Spread evenly onto a large tray lined with baking paper.
  4. Bake for 20-25 minutes, turning the mixture a couple of times to ensure it is nice and golden.
  5. Allow ingredients to cool before adding the dried fruit. For an extra festive hit, add a little more cinnamon if you like.
  6. Will keep in an airtight container for up to 2 weeks (but trust me, you will eat it up before then)
